This is a fluffy pound cake loaf that is easy to make and absolutely delicious. We have used coconut oil for a healthy cooking oil, but you can substitute it if you would like. The sour cream can also be replaced with plain Greek yogurt for a lower fat option if you prefer.

Making the lemon loaf

  • Preheat oven to 350 F
  • In a medium mixing bowl combine flour, salt, baking powder, and baking soda
  • In a separate bowl mix together eggs, sugar, vanilla, lemon zest, lemon juice, sour cream, and butter with an electric beater
  • Combine the wet and dry ingredients together
  • Add in the coconut oil and mix well
  • Pour the batter into a 9 x 5 well greased bread pan
  • Bake for 45 minutes or until a toothpick can be inserted and comes out cleanly

Making the lemon glaze

  • Combine powdered sugar, lemon juice, and milk and whisk together
  • Cool loaf is completely before pouring the icing over the top of it

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 2 tablespoons butter, room temperature
  • 1 tsp vanilla extract
  • 3 tablespoons lemon zest
  • 1/3 cup lemon juice
  • 1/2 cup sour cream, you can also use plain greek yogurt for a healthier bread
  • 1 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup coconut oil
  • Icing:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 tsp fresh squeezed lemon juice

Instructions

  1. Preheat oven to 350 F
  2. In a medium bowl combine flour, salt, baking powder, and baking soda.
  3. Next, mix together eggs, sugar, vanilla, lemon zest, lemon juice, sour cream, and butter with an electric beater.
  4. Combine the wet and dry ingredients together and beat with the mixer.
  5. Finally add in the coconut oil and mix well.
  6. Pour the batter into a 9 x 5 well greased bread pan.
  7. Bake for 45 minutes or until a toothpick can be inserted and comes out cleanly.
  8. Cool on cooling rack for a few hours.
  9. Icing:
  10. Combine powdered sugar, lemon juice, and milk and whisk together.
  11. make sure the loaf is completely cool before pouring the icing over the top of it.

Notes

Substitute all the butter for coconut oil for more coconut flavor. Greek yogurt can be used instead of sour cream if desired.
