I recently bought the newer version of my instant pot for my oldest daughter and asked her to review it for me. She is totally sold on it. I also bought her the tempered glass lid which her and I both LOVE.
The thing about cooking chicken breasts in a sauce under pressure is it turns out full of flavor and juicy. The pasta is made right in the instant pot. It’s so easy to make a meal like this. Everything is done in one pot.
After the chicken is finished just add the pasta and set the Instant pot to manual for five more minutes. Done! Store leftovers in the fridge right in the instant pot if you have the glass lid. I love that!
Instant Pot Mediterranean Pasta Chicken Recipe:
This recipe gave Dave and I leftovers for several days. Every day the flavor gets better and better. As the noodles continue to suck up the sauce the flavors intensify. Yum!
- Put everything in the instant pot except the pasta. Seal the lid and set to manual for 12 minutes (25 minutes for frozen breasts). Natural release for 10 minutes then Quick release.
- Open the instant pot and Add the pasta. Reseal and set to manual for 5 minutes. Natural release for 5 minutes then quick release and serve.
Dinner doesn’t get much easier than this. And the best thing about the instant pot is you don’t have to watch it! Read, rest or visit with the family once the pot is loaded. Easy Peasy!
Use Easy homemade Marinara sauce or store bought sauce as you prefer.
