This Instant Pot Mediterranean Pasta Chicken goes into the same yummy Italian direction with chicken breasts and pasta. It’s so good!

I recently bought the newer version of my instant pot for my oldest daughter and asked her to review it for me. She is totally sold on it. I also bought her the tempered glass lid which her and I both LOVE.

The thing about cooking chicken breasts in a sauce under pressure is it turns out full of flavor and juicy. The pasta is made right in the instant pot. It’s so easy to make a meal like this. Everything is done in one pot.

After the chicken is finished just add the pasta and set the Instant pot to manual for five more minutes. Done! Store leftovers in the fridge right in the instant pot if you have the glass lid. I love that!

Instant Pot Mediterranean Pasta Chicken Recipe:

This recipe gave Dave and I leftovers for several days. Every day the flavor gets better and better. As the noodles continue  to suck up the sauce the flavors intensify. Yum!

Simple Instructions:

  • Put everything in the instant pot except the pasta. Seal the lid and set to manual for 12 minutes (25 minutes for frozen breasts). Natural release for 10 minutes then Quick release.
  • Open the instant pot and Add the pasta. Reseal and set to manual for 5 minutes. Natural release for 5 minutes then quick release and serve.

Dinner doesn’t get much easier than this. And the best thing about the instant pot is you don’t have to watch it! Read, rest or visit with the family once the pot is loaded. Easy Peasy!

Use Easy homemade Marinara sauce or store bought sauce as you prefer.

Ingredients

  • 3 Large Skinless Boneless Chicken Breasts
  • 1 Cup chicken broth
  • 2 Cups Marinara Sauce
  • 1 14.5 oz. can diced tomatoes, with the juice
  • 1 Tablespoon chopped roasted peppers, jarred
  • 1/2 Cup Sun Dried tomatoes
  • 1/2 Cup Kalamata Olives
  • 9 oz. Penne pasta

Instructions

  1. Put everything in the instant pot except the pasta. Seal the lid and set to manual high pressure for 12 minutes (25 minutes for frozen breasts). Natural release.

Notes

I made this with frozen chicken breasts and it turned out great. But it will add extra time to the recipe. Also the pasta will absorb the liquid as it sits. So if the recipe is a bit saucy, uncover the pot and let it sit 10 minutes or so to absorb the flavorful sauce.

Do you use low high or max pressure? Also, if you change from natural release to quick release or pulse release, how does this change the recipe?

Hi Fareed, Thank you asking. Use manual high pressure for this recipe. The way you release the pressure has a big effect on the finished results. I would natural release to give the pasta time to fully cook and absorb the flavors in this meal. The chicken will also be more tender if you use natural release. I hope that helps. I’m interested in quite a few of your IP recipes, however I’m nervous about the cooking time. With both raw & fresh chicken, I’ve never cooked it longer than 12 minutes... well, correction. I have cooked it for 20 minutes once and it was dry and disgusting. Your chicken isn’t getting dried out and tough being in the IP 25+ minutes??

Hi Michelle, You only cook the the chicken under pressure for 12 minutes UNLESS the breast are frozen. Frozen breast require the 25 minutes to get them completely and safely cooked. Hope that helps! Please let us know how this recipe turns out for you.Have a great day!
