Leftover Holiday Pie Inspiration and Recipe

Leftover holiday pie is a perfect solution for using up the little bits leftover from your holiday meal. Any leftovers can go in this pie. Leftover bits of turkey, ham, lamb or beef all make great pie and so does sausage. Do you have extra Stuffing? leftover green bean casserole? Mashed potatoes and gravy? Repurpose it all into a delicious hearty meat pie made from your leftovers!

Leftovers from a big holiday spread? Try this leftover holiday pie to use them up in a delicious one dish meal!

These last few days have been easy on me. Belly up to the fridge and pull out yummy mashed potatoes and gravy, Homemade dinner rolls, stuffing and turkey. Happy days!

The leftovers from our Thanksgiving feast are dwindling down to one last meal. It’s time for Leftover holiday pie! This recipe is completely versatile and creative. Today I’m using up leftovers from Thanksgiving turkey. So the crust is stuffing, the meat is turkey and gravy with broccoli  and the topping is mashed potatoes.

This pie could just as easily use leftover ham and a pie crust with mashed potatoes or cheese topping. Have beef? Beef, gravy and veggies in the filling, with a pie crust bottom and potatoes on top, spice it up to suit your family. I’m using up some fresh peppers by chopping them small and mixing them into the stuffing crust. Get creative in the kitchen and use up your leftovers!

Leftover Holiday Pie: Here’s How I made it Today:

The Crust:

  • Add some broth to the stuffing until it’s nice and wet and form it into a bottom crust. My stuffing used sausage so I moved most of the sausage down to the pie plate bottom and used the breading up the sides.

Next, make your filling:

  • Today I used Leftover Turkey (great way to use up the small bits of dark,  less desirable meat), leftover gravy and broccoli.

Finally the topping:

  • I used mashed potatoes with cream and French fried onions on the top.

Can you say delicious and yummy way to make one last meal out of your Holiday feast? Oh yeah! By the time this pie is on our menu we are so done with feasting on the same leftovers. Making is all into a pie puts it all into a new framework and gives it a refreshed taste.

Use seasonings that help recreate the flavors and meld them together too. Ideas for that:

  • Make your roast beef a smoky barbecue pie with smoky seasonings like Smokehouse Maple or Sweet Mesquite.
  • Turkey and Chicken leftovers can be repurposed with curry, your veggies tray veggies and leftover hash brown casserole or a mashed potato top. OR use your poultry to make a leftover version of our Chicken Pot Pies.
  • Lamb is also makes a delicious meat pie with potatoes, vegetables and chicken stock and red wine. Thicken it all up in a skillet with cornstarch. and put it in your stuffing crust.
  • If you want to go the extra mile you can also easily make a coconut oil pie crust or our sourdough pie crust.

LEFTOVER HOLIDAY PIE

Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes

Ingredients

  • 2 Cups cooked stuffing
  • 3 or 4 Tablespoons broth
  • 1/4 Cup cream cheese
  • 1/2 Cup gravy or broth
  • 2 Cups leftover meat, this recipe is for poultry but ham or beef could be made to work
  • 1 Cup leftover or frozen veggies, broccoli or corn
  • 1/2 Cup shredded Swiss or other cheese
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 cups mashed potatoes
  • 1/4 Cup half and half cream
  • 2 tablespoons butter, melted
  • 1/2 cup French-fried onions, optional

Instructions

Crust:

  1. In a small bowl, combine stuffing and enough broth to reach desired moistness; press onto the bottom and up the sides of a greased 9-in. deep-dish pie plate. Bake at 350° for 10-15 minutes or until lightly browned.

Filling:

  1. In a large bowl, beat cream cheese and gravy until smooth. Stir in the turkey, broccoli, Swiss cheese, salt and pepper. Spoon over crust.

Topping:

  1. In a small bowl, combine potatoes and cream; spread over turkey mixture. Drizzle with butter; sprinkle with onions if desired. Bake 20-25 minutes or until heated through and lightly browned.

Could I add cauliflower with cheese sauce to this recipe? How and when to add it

Hi Julie, Yes you can. I'm assuming you're replacing the brown gravy with the cheese sauce? I would add the cauliflower with the broccoli into the filling. If the cauliflower has the cheese sauce with it just add them both at this time. Sounds delish!
