Ice cream floats are a delicious, fun drink to celebrate summer. I’m enjoying my new ice cream maker. My freezer is full of delicious frozen flavors right now. Homemade ice creams and frozen greek yogurt, made with organic, fresh ingredients are on my summertime menu and we are LOVING it!

Putting together an ice cream float means dumping a scoop of my lovely organic ice cream onto a can of soda pop??? Nope. Not happening here. We gave up that nasty stuff ages ago and I’m heavily resisting bring pop back into our house, even for floats.Lemon Lime Strawberry Float

I found a way to make those fun, fizzy explosive drinks with organically grown fruits and sparkling lemon water! And this is a heavenly combination. So worth the extra work to make a pitcher of homemade lemon-limeade and a batch of strawberry syrup and fizz it with a bit of sparkling lemon water.

NOW dump a lump of creamy ice cream in that and enjoy a truly delightful drink! This float is made with Cheesecake Ice cream. Try whatever flavor floats your boat!  vanilla bean, or strawberry would also be divine in this. Feel like experimenting? That’s the fun of floats. Throw whatever ice cream, sorbet or frozen yogurt  you have together with this citrusy strawberry drink and enjoy!

I’m spending a lot of time with my three granddaughters this week. Boy are we having fun with ice cream treats. This float was a big hit with them. My oldest grand daughter; Aliyah, muscled those lemons and limes onto my hand juicer and gleefully squished out the necessary lemon-lime juice.

 I found a drink recipe on the Food Network that worked for the foundation of this float. By adding sparkling lemon water and a couple of limes to bring in some flavor and some fizz… Perfect for floats!

I found these adorable mini float glasses at the local Dollar tree. Just right for feeding small kids, and a light yummy treat for grown ups!

Lemon Lime Strawberry  Float Recipe Notes:

The strawberry is added separately and that gives you control of the sweetness factor. The first version of this float came out VERY sweet so I backed off the the strawberry syrup and found the balance point for our crowd between sweet and tart. Make it how you like it! Have leftover strawberry syrup? Think ice cream sundaes…for when your full up on floats.

Ingredients

  • 2 limes
  • 9 lemons
  • 2 Cups strawberries
  • 2 Cups sugar
  • 1 1/2 Cups filtered water
  • 1 Liter sparkling lemon water
  • 1/2 Cup ice cream per float

Instructions

  1. Squeeze all limes and lemons, set aside
  2. Keep the skin of one lemon, slicing into 1/4 inch strips
  3. Add the lemon skin, 1 1/2 Cup of the sugar and 1 1/2 Cup tap water to a medium pot and bring to a boil stirring often to dissolve sugar. Once the sugar is dissolved, remove from heat and let cool in the refrigerator
  4. Prepare the strawberries by hulling and slicing them. Add them to the remaining 1/2 cup of sugar in a bowl and let sit at room temperature until juice is formed
  5. Once the lemon syrup is cooled pour it into a large pitcher, pour in the lemon lime juice and fill up the picture with the sparkling lemon water. Stir well. Refrigerate until chilled through
  6. At serving, Fill a glass 1/2 to 3/4 full with the sparkling lemonade. Add strawberries and juice to taste. Add one scoop of ice cream or sorbet to finish
  7. Garnish with strawberries as desired. Enjoy!

Notes

Don't pay any attention to the nutrition app on this recipe. If each drink is topped with a 1/2 cup scoop of ice cream or sorbet the calories will increase. It will also vary depending on float serving size with will change with the glass size.
