  • Black forest ham (or any leftover cooked ham)
  • Pasta noodles
  • You choice of cheese (we used a pre shredded cheddar mix)
  • Sour cream or plain Greek yogurt
  • Chicken broth
  • Whole milk
  • Onion
  • Focaccia croutons. Any bread crumb will work but you will need to season the topping for flavor.

  • Par boil the noodles
  • Prepare the sauce
  • Stir in the other ingredients

Ingredients

  • 4 Cups uncooked macaroni noodles
  • 1 Cup yellow onion, chopped
  • 1/2 Cup sour cream (or thick Greek yogurt)
  • 3 cups diced, cooked ham (I used thin sliced Black Forest Ham)
  • 3 Tablespoons butter
  • 2 Tablespoons flour
  • 1/2 Cup milk
  • 2 Cups shredded cheese
  • 1 Cup chicken broth
  • 1/2 Cup crushed croutons (I used garlic flavored Focaccia croutons)

Instructions

Prep:

  1. Preheat an oven to 350 degrees F.
  2. Oil a 9 x 13 pan.Oil Casserole-Ham Casserole set aside.

Make the Casserole:

  1. Cook the noodles as directed until al dente, remove from heat and drain. Set asideCooked Pasta
  2. In a skillet on medium heat, melt 1 tbsp butter.
  3. Saute onions until lightly transluscent
  4. Remove onions from skillet
  5. In a large skillet on medium heat, melt 2 tbsp butter

  7. Add 2 Tablespoons flour and whisk together until thick.

  9. Add chicken broth and whisk until the sauce bubbles and thickens. (see video)

  11. Add in the sour cream, chopped ham, onions, and noodles mixing well.

Notes

This casserole freezes well if tightly covered in foil. Defrost on counter or (in the fridge a day ahead of baking) bake as directed.

*Plain greek yogurt can be substituted for the sour cream.

Now to transform this ham dinner into a hamburger Mac and Cheese... There are SO many ways you can go with this.

To keep the integrity of this casserole I would use a pound of lean hamburger. Saute it in a skillet until browned with the onion. To help move the flavor profile into a great fall beef casserole you can try adding 1 tsp. chili powder and about a cup of kernel corn and or 1 14 oz. canned drained kidney beans into the casserole mix. This will move the flavors into a heartier almost chili mac style casserole.

If it seems a little dry increase the broth to 1 1/2 Cups. You can just straight up change out the meats. However, I made the whole recipe around the concept of a quick and easy ham pasta casserole. So I think these suggestions will help the flavors work better.
