Ranger Cookies Recipe

Ranger cookies make a good large group event treat. They have lots of flavors and crunchiness. These are good travelers and make an easy grab food for camping and hikes. These cookies are perfect for fundraisers. Sidewalk sales. PTA events. Places where people cruise around and need a snack that is sustaining and won’t fall apart in the hand.

This is my sister in law Linda’s recipe. I remember several times walking into her kitchen and stopping dead in my tracks. The intense smell of butterscotch redirected my steps to her baking racks. Ranger cookies were cooling on her counter. I snatched one before she could tell me NO! She was usually making them for a fundraiser.

Linda always seemed to be baking for an event of some kind. Ranger cookies were one of her favorite fundraiser recipes. She knew if she didn’t defend them I would eat up several dollars worth of her proceeds. What can I say? I’m helpless against these yummies. They are so good fresh out of the oven!

For some reason, Ranger cookies came to mind these last several months. I think I smelled butterscotch and it triggered this memory. I wanted to bake them but didn’t have the recipe. Our sweet Linda passed on several years ago. I finally remembered to ask Linda’s girls about this recipe. Her daughter Erin shared it with me.

This recipe makes a lot of cookies. And if you are making them for a next day event they travel well and go like hot cakes! Just keep them in an airtight container or tightly wrapped after cooling so they don’t dry out. Linda and her daughters sold these and other home baked delights out in front of their house to raise money for the historical society in their neighborhood. And for school events. And church events. and so on… this is a well tested recipe!

We are in the middle of a remodel-Addition right now. I’m putting these babies out there in the construction site because they are good grab food for hungry workers! And the light out there shows off the awesome texture these cookies have 🙂

I love the butterscotch and coconut flavor combination. I have no idea where the Ranger cookie name came from but I can believe these would easily sustain a hungry cow puncher out on the range.

These cookies are best fresh. Keep them in an airtight container or tightly wrapped. They will go stale after a couple of days in the cookie jar.

This is Erin’s Recipe note on Ranger Cookies:

“I am careful not to overdo the flour since there is SO much in these cookies and they can get on the dry side if you’re not careful. I also add a pinch of salt when I make them. And as mom would say, “hark ’em!” “(Lol, you would have to know Linda to get that last remark. I miss her quirky humor so much).

Ingredients

  • 2 Cups flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 Cup shredded coconut
  • 2 Cups regular oats
  • 2 Cups crushed corn flakes
  • 1 Cup butter
  • 1 Cup sugar
  • 1 Cup brown sugar
  • 4 eggs
  • 1 Cup chopped walnuts
  • 1 Cup butterscotch chips

Instructions

  1. Preheat oven to 350 degrees F.
  2. Whisk together the flour, baking soda and baking powder
  3. Add the shredded coconut, cornflakes and oats. Stir until thoroughly blended together
  4. In a separate bowl combine the butter, eggs, sugar and brown sugar
  5. Add the wet ingredients to the dry and the butterscotch and walnuts. Mix together until thoroughly blended
  6. Drop by teaspoonfuls onto a cookie sheet
  7. Bake 12 minutes or until golden brown

Dying to try these cookies! My mom used to make these at Christmas and I remember the crispy crunchy texture. I don't remember her adding butterscotch chips, but I'm thinking that would be a good addition!
