Roasted Pepper Cheese Fondue Sauce delicious and healthy!

Several months ago I purchased my very first fondue pot! Dave and I have enjoyed several impromptu dinners where I throw  a bunch of cheese into the fondue pot. This is the first fondue recipe I am sharing.

We had this sauce with broccoli and an artisan bread. So good!

This sauce is really pretty special. And…maybe a bit weird for fondue. But you will love it! Promise! I don’t know how many fondue sauce recipes use the add-ins I have in here. I just put in a variety of our favorite things. That’s when I’m having fun. I like to play in the kitchen.

As a teenager, I ate fondue once in a while. Mom had one of those fondue pots with the little flame under the pot you had to light. With Sterno? I think that was it. The same little burners hobos (The first street people) used back in the day. We enjoyed those fondue dinners! The Fondue pot was a lot of trouble though, and difficult to operate, so we didn’t use it much.

My modern fondue pot is electric, and easy! So, when Dave and I have a busy day outside; I often start chucking cheeses in the fondue pot and make something up for dinner on the fly! So far, we have enjoyed everything I’ve made in there!

This sauce is low carb and not bad on the calories either. If you want to go really skinny on the carbs, don’t use bread for dipping!

Roasted Pepper Cheese Fondue sauce is wonderful over broccoli and sausages. Dave and I had it that way and we loved it. This recipe is Low sugar and gluten-free if you don’t use the bread!

Try it with pretty much any veggies or chicken or pork. It would work with beef too, but I think not as well for a flavor friend. I might be wrong. Let me know if you prove me wrong. I’d love to know what you do with it! 🙂

This sauce is chunky, filling and satisfying. The bacon adds so much flavor!  I used our roasted red peppers from last years garden. I have a  bag of roasted peppers in the freezer . Our homemade Sun dried marinated tomatoes  are WONDERFUL in this! Any jarred Sun Dried tomatoes will work as well.

I’m enjoying how easy dinner can be for just us two. All the kids moved out this last year. Dave and I can make a meal out of this sauce and have leftovers! Love that! I just need to find something to dip the sauce in.  Get your fondue on!!

Roasted Pepper Cheese Fondue Sauce Recipe:

This sauce is great leftover too. It will solidify when stored in the fridge. So, when you reheat it stir it up. If it doesn’t loosen up as much as you prefer, add a bit of liquid and stir it some more.  Reheat and stir it until you like what you have. I used a little heavy cream to loosen mine. Milk or even broth or water would work as well.

Here’s how I made Roasted Pepper Cheese Fondue Sauce:

  • Warm the fondue pot to medium low
  • On medium heat cook the bacon in a skillet until done.Roasted Pepper Cheese Fondue Sauce
  • While the bacon cooks, Prepare the cheeses by cutting to size.
  • Add cheeses to the fondue pot with the chopped roasted peppers and dried tomatoes.Roasted Pepper Cheese Fondue Sauce
  • Stirring occasionally, cook the bacon and melt the cheeses.
  • Now add the bacon into the fondue sauce and melt until it can be stirred into a sauce.

Roasted Pepper Cheese Fondue Sauce

Cook Time: 30 minutes
Total Time: 1 hour

Roasted pepper cheese fondue is a thick cheese sauce full of peppers, sun-dried tomatoes and bacon for added flavor and texture. 

Ingredients

  • 1/2 Cup roasted peppers (jarred, fresh or frozen-chopped small)
  • 1 x 2 in. block of extra sharp cheddar cheese
  • 1/2 Cup jarlsburg cheese
  • 8 oz. cream cheese
  • 6 sun dried tomatoes, chopped
  • 5 strips cooked bacon, diced
  • 1 Tablespoon olive oil
  • 1 tsp. chipotle seasoning
  • 1 tsp. bruschetta seasoning

Instructions

Prep:

  1. Warm the fondue pot to medium low
  2. On medium heat, cook the bacon in a skillet until done
  3. Prepare the cheeses by cutting to size

Assembly:

  1. Add cheese cubes to the fondue pot with the chopped roasted peppers
  2. Stirring occasionally, add the bacon and melt the cheeses
  3. Add seasonings to taste
  4. Dip either your favorite artisan bread pieces, meats, chips or veggies into the sauce

Notes

All you had to say cheese -- melted to be exact. Yum!! I could make an entire meal out of cheese but oh now I see your broccoli and I could just tack a nice piece and dip it in that cheesey sauce! Great recipe!
