This recipe is a total blast from my past. My mom taught me to make this casserole when she was a young widow, working full time with two kids to raise. At twelve, I was fast tracked into cooking for the family as a latch key kid. This was one of the recipes she taught me that we ALL loved and ate with gusto.

If you need a fast, easy dinner recipe to start your young cook on here is a likely candidate! Kids love to lay the sausages on top in patterns. Just tell them to make every row different, but no spaces. It’s a great game!

Sausage Sauerkraut Casserole

The FLAVORS of the apple, onion and sauerkraut all baked together with the sausage dripping down into the mix. The SMELLS!

Last night I made this after having some serious sausage and sauerkraut cravings for about a month. Dave brought me a box of fresh apples to freeze yesterday and we had the sausage and sauerkraut, so this was dinner. So good! Put this casserole together with your favorite sides. Corn on the cob and green beans are ripe in the garden so that’s what I made.  Baked acorn squash is another of our family favorites.

A perfect meal for harvest time!

Feel free to use any sausage or combination of sausages you like. Same goes with the apple varieties and sauerkraut. The hardest thing about this post is nailing down the proportions for the printable recipe nutrition ap.

Adjust the amount of sauerkraut, apple and onion to your taste and the size of the crowd you are feeding. Try adding garlic or other seasoning you may enjoy. I always make it just like this. This is a KISS recipe for me. I don’t want it complex. We like it this way.

Sausage Sauerkraut Casserole Recipe Notes:

Back to the amounts…. lay about 1 inch of sauerkraut into the bottom of your casserole dish (any size). add the chopped apples and onions. Mix it all up and press lightly into a level layer. Now lay the sausage over the top in patterns. My mom used Kielbasa, polish and whatever else she saw that looked good to her at the store. I used polish and chicken sausage because that’s what I had. Flexible, healthy, versatile and quick to make. This one’s a keeper for sure!

Ingredients

  • 1 large apple, chopped small
  • 1 lb. polish sausage dogs
  • 1/2 large onion, minced
  • 8 oz. sauerkraut

Instructions

  1. Preheat oven to 350 degrees.
  2. Oil a 9 x 11 inch baking dish
  3. Chop the apple into small pieces, mince the onion and slice the sausage into 1/2 inch rounds
  4. Lay the apples, onion, and sauerkraut in the bottom of the baking dish and mix them together
  5. Smooth into a level layer
  6. Place the sausage chunks on the sauerkraut layer in even rows, tightly spaced
  7. Bake about 30 minutes until the sausages are browned and the sauerkraut layer is slightly bubbly
