Preheat oven to 400 F and line a baking sheet with parchment paper In a small bowl whisk together 1/2 Cup brown sugar 1/4 Cup granulated sugar 1/2 tsp. ground cinnamon 1/4 tsp. ground nutmeg 1 1/2 tsp. pure vanilla extract

Gently roll out a sheet of puff pastry into a rectangle Cut into 4 smaller rectangles  Repeat with the other sheet of puff pastry

Prep 2 medium apples by washing and thinly slicing them Spoon out a tablespoon of the sugar mixture on the parchment paper Lay 5-6 apple slices over the sugar mixture Gently place a puff pastry square on top Repeat until all of the pastry squares are used

Use a fork to press along the edges and seal the pastry to the parchment paper Whisk an egg wash using 1 egg and 2 tbsp of water  Use a pastry brush to brush the egg wash over the top of each puff pastry Place baking sheet in oven and bake for 20 minutes until puffy and golden brown

Remove from oven and gently flip pastry over keeping the cooked apples in the center These are best enjoyed warm, but be careful as the pastry will easily break
