To start, preheat your oven to 350 degrees F
You will need 1 Cup of fresh or frozen and thawed shredded zucchini
Make sure all excess liquid has been pressed out the of the zucchini
Chop 6 large slices of uncooked bacon into 1/2 inch pieces
Mince 1 large cloves of garlic
Set a skillet to medium heat
In the skillet cook the bacon and garlic
Once the bacon is crisp, remove it from the heat and drain the excess grease from the pan
Prep a muffin pan with liners
Next shred
1 1/2 Cups smoked Gouda Cheese
In a bowl whisk together
3 Cups flour
4 tsp. baking powder
2 tsp. Dried dill weed
1/2 tsp. baking soda
In a large mixing bowl combine
The prepped zucchini
Shredded cheese
2 eggs
Then add
1 Cup buttermilk
– 1/4 Cup softened coconut oil or butter
The cooked bacon and garlic
Slowly add in the mixed dry ingredients
Mix until everything is fully combined
Fill the muffin tins 2/3 full using an ice cream scoop
Bake for 20 minutes
