To start, preheat oven to 350 degrees F
Oil a large baking sheet or place a silpat mat on it
In a mixing bowl combine
2 cups baking mix (like bisquick)
1/3 cup sugar
Whisk together
To the dry ingredients, add
1/3 cup melted coconut oil
2/3 cup full fat yogurt
1/2 cup montmorency cherries-chopped small
3 Tsp. marmalade or other citrus/peach based jam
Mix well
Oil your hands a bit
Place the scone dough on the baking sheet
Press the dough out into a circle shape (or rectangle) so it''s an even thickness
Bake 20 minutes
Remove from oven and cut the almost done scones into desired scone shapes
Return to the oven about 5 minutes to crisp the edges of the scones
They are done when a slight golden brown color begins around the crust edge
You can let them cool and finish with a sugar glaze if desired
