Freezing zucchini straight from the garden with no prep will result in weepy and mushy thawed zucchini
Zucchini should be blanched for a minute or two to avoid enzyme breakdown, and to drain out excess liquid
Grated zucchini can be frozen 3-4 months
After blanching, the grated zucchini can be drained and compressed into a freezer safe bag
Freezing zucchini when it is fresh/raw (after blanching) retains more nutrients than freezing cooked zucchini
However, both methods work just fine for freezing and preserving zucchini
Chop the ends off of your zucchini
Shred into a large pile
Blanch in a large pot of hot water for 1-2 minutes
Submerge the blanched zucchini into cold water
Drain out the excess water
Fill a freezer safe Ziploc bag 3/4 full
Be sure to label the bag clearly
