In a mixing bowl whisk together 2 cups heavy cream 1 cup whole milk ¾ cup granulated sugar 1 teaspoon pure vanilla extract 1½ teaspoons peppermint extract pinch of salt If you would like the classic green color add a few drops of food coloring and mix until combined

Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions  This usually takes about 20-25 minutes, depending on your machine

When the ice cream is almost done churning, gradually add  1 cup semi-sweet chocolate chips or finely chopped chocolate  Continue churning until the chocolate is evenly distributed

Transfer the churned ice cream to an airtight container  Smooth the top, cover, and freeze for at least 4 hours, or until firm  Overnight works best
