In a large mixing bowl or stand mixer, combine

3/4 C Milk (198 grams) 1 C unfed Sourdough Starter (227 grams) 1 Tbs softened butter or oil 3 C Bread Flour (361 grams) 1 Tbs Sugar (14 grams) 1.5 tsp Salt 2 tsp Instant Yeast

Combine all ingredients until a sticky dough ball is formed. Then, knead with hands for 10 minutes, adding extra tsp of water if needed to create a cohesive dough ball. Cover and allow to rest for 45 minutes

Preheat your oven to 350 degrees F Prepare your baking sheet with a silicone baking mat, or parchment paper

Roll dough out to roughly 1/2" thickness. Cut dough into 12 equal pieces, and roll into a rope shape about 18" long

Form each dough rope into a pretzel shape Lay evenly spaced onto the baking sheet

Brush with a baking soda wash if you are doing one Combine 1 Tbs Baking Soda 2 Tbs Water

Sprinkle unbaked pretzels with pretzel salt onto wet dough to finish

Bake at 350 degrees F for 20 minutes or until light golden brown Brush warm pretzels with melted butter for added shine and flavor then allow to cool
