Select your alcohol that the vanilla beans will be infused with. You want an 80 proof alcohol. If it is higher than 80 proof it will need to be diluted with distilled water. the best choices would be a high quality vodka or Everclear (diluted if needed)

Other alcohols that people use for Homemade Vanilla include Brandy, Rum, Bourbon and even Gin. These can definitely be used but, keep in mind that because they all introduce flavor, it will alter the flavor of your vanilla extract a bit. 

Next, select 24 high quality vanilla beans. Madagascar vanilla beans have a rich, warm vanilla flavor making them the most popular choice. Grade B beans are the best choice for making vanilla extract and are specifically produced for such a product.

Other supplies needed include -A funnel -Glass jars with strong sealable lids -A small sharp knife -Labels

Gently slice the vanilla beans lengthwise, being careful not to cut all the way through the bean pod. Place the sliced bean pod in your jar. The strength of vanilla will depend on how many pods are used in each bottle.

Using the funnel carefully pour alcohol into each bottle, covering the bean pods. Cut the bean pods into shorter lengths if necessary. Clean the rim and outside of the bottle if needed. Wipe the surface with an alcohol wipe before affixing your label.

Allow the bottles to infuse in a cool dark pantry for at least 6 months, preferably 12 months for optimal flavor and strength. Vanilla extract will last for years when stored in a cool, dark pantry.
