To start, preheat your oven to 375 degrees F
Oil a 9x13 baking dish and line with parchment paper
Over a double boiler, or in your microwave, melt together
1 Cup coconut oil
6 oz. unsweetened chocolate, finely chopped
2 oz, semi sweet chocolate, finely chopped
Stir and be careful it doesn't scorch
Set aside to cool
In the bowl of a stand mixer fitted with mixing beaters, mix together
4 large eggs
1 large egg yolk
2 Cups granulated sugar
1 Cup brown sugar
Beat until light and thick
To the mixture, add in
2 tsp. instant espresso powder
2 tsp. pure vanilla extract
Combine until smooth
Sift in
1 Cup all purpose flour
1 tsp. salt
Mix until everything is just combined
Pour into prepared pan and bake for about 25 to 30 minutes
Cool completely
TO MAKE A CHOCOLATE GANACHE
Melt together
8 oz. Bitter sweet dark chocolate, chopped into small pieces
1 Cup heavy cream
