To a large pot heat 8 Cups of water to a rolling boil Add 2 Cups uncooked Basmati rice Boil for 10 minutes or until liquid is absorbed and rice is tender

Strain rice and rinse with hot water Drain the rice completely and put in a large bowl

To the rice, stir in 2 Tablespoons lime juice (fresh squeezed) 2 Tablespoons lemon juice (fresh squeezed) 1 Tablespoon cilantro (freshly minced)

Fluff the rice until the flavors are fully incorporated

Serve with lime wedges and enjoy
