To start, preheat your oven to 350 degrees F
Using a large sourdough boule, cut down into the bread making 1" square wedges
*be careful not to cut through the bottom of the loaf*
Cut wedges of cheese 1/4 inch thick by 1 inch or so
2 Cups Smoked Gouda cheese
2 Cups Cheddar cheese
Stuff them in between the bread slices
Wrap the loaf in tinfoil, place on a baking sheet in center of the oven, and bake until all the cheese is melted; about 20 minutes
Meanwhile, begin to saute 6 slices of bacon
When the bacon is half done add
2 peppers diced-medium heat
1/4 cup chives-chopped
Chop the bacon into small pieces
Unwrap the loaf and sprinkle the bacon mixture over the loaf, pulling the bread pieces gently to thoroughly distribute the topping
