To start, heat your griddle to medium heat and drizzle
1 tbsp oil
Add 1 lb ground beef, break apart and spread evenly
Season with
2 tbsp taco seasoning
1/4 cup water
While the ground beef cooks, add
1 medium onion, finely chopped
1 can (4 oz) diced green chiles
To a separate oiled part of the griddle
Once the beef is cooked combine everything and turn off heat to that side of the griddle
To the other side of the griddle place
12 small corn or flour tortillas
Cook until lightly browned, then sprinkle with
3/4 cup shredded Monteray Jack cheese
Spoon beef onto one side of each tortilla and close in half
Work in batches until all of the tacos are done, then top with
1/4 cup crumbled Cotija cheese
1/4 cup chopped fresh cilantro
Fresh lime juice
