To start, preheat your oven to 350 degrees F
Spray a 9x13 baking dish with a good quality cooking oil
In a large skillet warmed to to medium heat add
1/2 Lb bacon chopped into small sections
Cook until evenly browned
To the same pan add
1 Cup bell pepper-diced
1/2 Cup onion chopped
2 garlic cloves diced
1/8 Cup fresh chopped herbs, parsley, cilantro... whatever you like
Cook until the veggies are soft and translucent
Once the veggies are cooked, remove the contents from the skillet
Drain bacon and vegetable pieces on paper towels
In a medium bowl whisk
12 eggs
1 1/2 Cup milk
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Pour egg mixture into prepared baking dish
Sprinkle with
the cooked vegetable and bacon mixture
Top with
1 Cup fresh diced tomato
2 Cups shredded cheddar cheese
Carefully stir everything together until it is well combined
Bake in preheated oven until a knife inserted near the center comes out clean, about 25 to 30 minutes
