Preheat oven to 350 degrees
Oil a baking dish
Cut a zucchini in half lengthwise
Scoop out the middle part of the zucchini to prepare a 'boat' for stuffing
Next, prepare
1 1/2 Cups tomatoes-chopped
1/2 Cup pepper (sweet or hot) cut into small strips
1 Tablespoon garlic-chopped
Brush the surface with a mixture of the crushed garlic and coconut oil
Sprinkle the whole length of the zucchinis with Italian seasonings
Fill the cored out middle with the chopped tomatoes and peppers
Over the top of the veggies, sprinkle
1 Cup shredded mozzarella cheese
Top the cheese with
1 Cup focaccia croutons-crushed
Bake uncovered for 30 minutes, until the zucchini is slightly tender when pierced with a fork
Remove from oven and cut into serving slices
