To start, preheat your oven to 350 degrees F
Spray a 9 x 13 baking dish with your favorite cooking oil
Use either fresh or frozen broccoli florets
Steam 2 lbs of florets until they are tender
Set aside
Melt 2 tablespoons butter in a two quart sauce pan on medium high, then add in
1/8 Cup flour
1 Cup chicken broth
2/3 Cup mayonnaise
Whisk vigorously until it creates a thick sauce
While continuing to mix, add
1/2 Cup evaporated milk
1 Cup shredded cheddar cheese
1 tsp nutmeg
Allow to cook while stirring to build a rich cheese sauce, then remove from heat
Spread the broccoli in the bottom of the prepared baking dish
Pour 1/2 sauce and sprinkle 1 Cup of cheese over the broccoli
Layer 2 Cups cooked, shredded chicken (rotisserie or canned chicken work great)
Pour the rest of the sauce on the chicken and sprinkle
1 Cup shredded cheese on top
Bake about 30 minutes uncovered or until golden brown and bubbly
