Preheat your oven to 350 degrees F
Spray a deep 9 x 13 baking dish with your favorite cooking spray
Saute
1 Cup diced onion
2 Tbsp butter
*the recipe uses 1 Cup fresh peppers (of your choice) you can saute the peppers with the onion to soften if you wish
Set aside
In a large mixing bowl stir together
(1) 2 lb. package shredded hash brown potatoes (thawed)
3/4 Cup butter (melted)
The sauteed onion
The sauteed peppers
1 Cup sour cream
1 Cup grated cheese
(1) 10 oz. can cream of chicken soup
Pour the hash brown mixture in the prepared baking dish
In a small bowl add
2 Cups crushed corn flakes
2 Tbsp melted butter
Mix together and spread mixture evenly over the casserole
Sprinkle over the corn flakes
1 Cup shredded cheese
Bake 35 minutes covered
Uncover and bake 10 minutes more or until bubbly and golden brown
