In a stand mixer combine 1/2 Cup softened unsalted butter 1 Cup peanut butter 1 tsp vanilla extract 1/4 tsp salt Beat on low-medium speed until everything is smooth and creamy

Add 1.5 Cups powdered sugar and mix  Add remaining 1.5 Cups powdered sugar and mix until smooth The mixture will look dry and lumpy but will hold together when pressed and formed

Form into individual 1 inch balls until all of the mixture is used up Set the balls on a try and place in the fridge to chill. About 1 hour While they are chilling melt 16oz 100% dark chocolate

Using a fork, dip each peanut butter ball into the melted chocolate ensuring they are fully coated Return to the tray and refrigerate until they are chilled and firm. About 10 minutes 

The truffles can now be served as is, or decorated however you desire with candy melts, sprinkles, chopped nuts etc... Store truffles in the fridge until serving to ensure the don't melt
