Begin by heating a large pot to medium heat and add 2 Tbs Olive oil to cook1/2 Cup chopped celery1/2 Cup chopped carrots1 Zucchini chopped1 large onion diced
Saute until the veggies are soft (about 5-10 minutes) then add1 Tbs minced garlic and cook for 30 secondsPour in (1) 14oz can diced tomatoes
Pour in 4 Cups vegetable broth1/4 Cup (1) 6oz can tomato paste 1/2 Cup fresh or frozen green beans(1) 14oz can Great Northern white beans(1) 14oz can Kidney beans
Sprinkle in2 tsp Italian seasoning1/2 tsp salt1/2tsp black pepperAdd 1/2 Cup small dried pasta
Cover and cook on medium heat for 15 minutesRemove the lid and add 2 Cups fresh baby leaf spinach
Stir and cook until spinach is wilted
Serve garnished with fresh grated parmesan and parsley
