Begin by heating a large pot to medium heat and add 2 Tbs Olive oil to cook 1/2 Cup chopped celery 1/2 Cup chopped carrots 1 Zucchini chopped 1 large onion diced

Saute until the veggies are soft (about 5-10 minutes) then add 1 Tbs minced garlic and cook for 30 seconds Pour in (1) 14oz can diced tomatoes

Pour in  4 Cups vegetable broth 1/4 Cup  (1) 6oz can tomato paste  1/2 Cup fresh or frozen green beans (1) 14oz can Great Northern white beans (1) 14oz can Kidney beans

Sprinkle in 2 tsp Italian seasoning 1/2 tsp salt 1/2tsp black pepper Add 1/2 Cup small dried pasta

Cover and cook on medium heat for 15 minutes Remove the lid and add 2 Cups fresh baby leaf spinach

Stir and cook until spinach is wilted

Serve garnished with fresh grated parmesan and parsley
