Heat a skillet to medium heat and add
2 TBS of your favorite cooking oil
Prepare the following
4 red potatoes-diced
1/4 Cup onions-diced
3 peppers-minced
Pour the potatoes into the skillet, cook for 5 minutes until they start to brown
With a spatula turn the potatoes and add in the onions and peppers
Next, add 1 Cup chopped leftover corned beef
Cook until the potatoes are browned and fork tender
Break eggs over the top of the hash and add
1/4 Cup water around the outside of the pan
Cover and cook 5 more minutes or until the eggs are cooked
Garnish with peppers flakes or herbs as you desire
