If using a pre-made puff pastry sheet, lay it out flat and use a sharp knife or cookie cutter to cut 24 squaresFit each pastry square into each muffin tin so that the edges come up the side a bitIf using pre-made Filo dough cups, place one in each muffin tin
Remove the rind from an 8 oz Brie Cheese wedgeCut or pull off small sections of brie and roll into a ballPlace a ball of brie cheese into each pastry cup
In a small bowl mix together1/2 Cup mashed fresh raspberries1/2 Cup cranberry sauce either whole or jellied depending on your preferenceDrop 1 tsp of the cranberry raspberry jello into each pastry cup Top with chopped Thyme for garnish if desired
Bake at 375 degrees F for 10 minutesThe pastry should be slightly golden and the cranberry raspberry jello should be baked and meltedUsing a sharp knife to release the edges, remove the pastry cups and place on a cooling rack
