Preheat your oven to 375 degrees F

Oil a standard 24 muffin tin with coconut or avocado oil If using a sheet of pre-made puff pastry, set it out to thaw You can also use pre-made Filo dough cups if you prefer

If using a pre-made puff pastry sheet, lay it out flat and use a sharp knife or cookie cutter to cut 24 squares Fit each pastry square into each muffin tin so that the edges come up the side a bit If using pre-made Filo dough cups, place one in each muffin tin

Remove the rind from an 8 oz Brie Cheese wedge Cut or pull off small sections of brie and roll into a ball Place a ball of brie cheese into each pastry cup

In a small bowl mix together 1/2 Cup mashed fresh raspberries 1/2 Cup cranberry sauce either whole or jellied depending on your preference Drop 1 tsp of the cranberry raspberry jello into each pastry cup  Top with chopped Thyme for garnish if desired

Bake at 375 degrees F for 10 minutes The pastry should be slightly golden and the cranberry raspberry jello should be baked and melted Using a sharp knife to release the edges, remove the pastry cups and place on a cooling rack

Enjoy these Cranberry Raspberry Brie Bites!  They are best served warm and can be pre-made and heated in the oven just before serving if needed
