To start, preheat your oven to 425 degrees F
Line a baking sheet with parchment paper, spray cooling racks with oil
Wash and slice
2-4 zucchini depending on the size, slices should be roughly 1/2" in diameter
In a shallow mixing bowl combine
1/8 Cup coconut flour, or any flour you choose
1/2 Cup crushed croutons
1/2 Cup parmesan cheese
1 TBS Italian seasoning blend
In a separate small bowl whisk 1 egg with a bit of water until loose and spreadable
Coat each zucchini slice in the egg wash, then cover completely with the breading
*you can make extra if you would like to have more breading on the zucchini fries*
Arrange the breaded zucchini slices on the prepared racks, then place them over the lined baking sheets
*keeping them elevated with prevent them from getting soggy*
Bake for about 20 minutes until golden brown and crispy
