To start, peel and slice 2 large onions of your choice
You can use Sweet, Yellow, or large Red Onions
Use your hands to separate all of the onion ring slices into individual rings
In a medium to large skillet melt 1-2 Tbs of coconut oil
Once the oil is melted gently add the onion rings and cover with a fitted lid
When the onions have cooked down and become soft and translucent add
2 Tablespoons Brown Sugar
2 Tablespoons Balsamic Vinegar
Stir to combine
Continue to cook them uncovered and watch for the onions to darken and develop a delicious caramelized color
The juices will reduce to a thickness that will tend to cling to the onions adding extra flavor
Cook low and slow until the onions have caramelized
