Preheat a large skillet to medium heat and add
2 tsp olive oil
Once the oil is heated add
1 small onion, chopped
Once the onion has turned translucent add
1 1/2 Lb chicken breast cubed
1/2 tsp cracked black pepper
1/2 tsp salt
2 cloves garlic minced
Cook until fragrant
Push the chicken aside and add a bit more olive oil to the pan
Pour in
1 Cup long grain white rice
2 1/2 Cups chicken broth
Bring to a boil
Reduce heat to low and simmer for 12 minutes covered
Add
2 1/2 Cups broccoli florets to the skillet, cover with lid, and cook an additional 8 minutes
Add in
2 Cups grated sharp cheddar cheese and place lid back on cooking until the cheese is melted
