Start by prepping the ingredients as follows Slice 2 Cups potatoes into thin rounds or small chunks Chop 6 garlic shallots all the way up the stem Cut 2 Cups chicken sausage into 1/2 inch rounds

To you skillet heat 2 Tablespoons cooking oil Add the potatoes to the pan along with  1 Tablespoon sweet mesquite seasoning Cook until lightly browned

Next, add the garlic shallots and chopped sausage along with 1 tsp. red pepper flakes 6 eggs 1 tsp. salt 1 tsp. pepper *the eggs can be scrambled in or cooked on the side and served over easy if you prefer*
