To start, set a large pot of water on the stove to boil
While the water is heating, prep the vegetables
1 Cup English cucumber -quartered
3/4 Cup red onion-sliced
1 red bell pepper-chopped
spinach leaves-torn
Add (1) 16oz package of Orzo pasta to the boiling water and cook al dente
This should take about 10 minutes
In a separate bowl whisk together the dressing ingredients
1 whole lemon-juiced
1/2 Cup avocado oil
1/4 Cup olive oil
1 garlic clove
1 1/2 tsp. Dried oregano
1 tsp. black pepper
1 tsp. salt
Rinse the cooked pasta under cold water
Chop up
1 Cup kalamata olives
1/2 Cup black olives
Allow the pasta to cool to room temperature
Add the salad ingredients to your salad bowl beginning with the pasta, followed by the veggies and olives
Toss and mix together
Pour the dressing over the salad
Top with 1 Cup crumbled feta cheese
