Sugar Pie Pumpkins are best for baking with, and will yield a creamy, sweet puree that is delicious for a variety of recipes Begin by preheating your oven to 400 degrees F

Cut the pumpkin in half, de-seed and place on a baking sheet cut face down Bake 40 minutes or until the pumpkin halves are tender when pierced with a sharp knife or fork  The skins will brown and lift off the pumpkin a bit when done

You can add a bit of water to the pan to steam the pumpkin a bit, but we don't find it necessary Remove from the oven and cool

Using a serrated or very sharp knife cut off the pumpkin skins Place the skinned pumpkin pieces into a food processor and process until the puree is smooth
