Using your Instant Pot to make your own Greek yogurt is a cost effective way to enjoy this healthy food The Instant Pot simplifies the process and yields beautiful, creamy yogurt that can be strained into thick, luscious, Greek yogurt for parfaits, smoothies, and more

Begin by pouring 1 gallon of whole milk into your Instant Pot The milk fat is important when making yogurt Skim milks will not make good yogurt

Lock the lid onto the Instant Pot Press the Yogurt button on your Instant Pot Then, push the Adjust button until you see 'boil' displayed

The Instant Pot will now heat the milk to temp which will take about an hour Once the instant pot chimes to tell you it's done, remove the lid  Let the yogurt cool to between 115 degrees F and 110 degrees F

Once the milk has cooled, you will add about 1 Cup of starter yogurt This will introduce the bacteria necessary to ferment the milk and make yogurt Make sure you are using plain yogurt with live cultures for the starter

Gently whisk the starter through the milk to distribute Turn the Instant Pot back on and affix the lid Push the Yogurt button and press the adjust button until the timer is displayed Adjust the timer to at least 12 hours  This is the fermentation time

After the fermentation time your yogurt will be ready, but it will not be Greek yogurt yet Greek yogurt requires the whey to be strained out The above picture shows the liquid whey in the yogurt

Straining the whey out of the yogurt will take 3-4 hours minimum, and can be done for longer periods depending how thick you want your yogurt You can strain using cheesecloth, tea towels, or a specific yogurt straining container
