Heat 1 Tbs cooking oil in a large skillet
Place 1 pound of ground turkey in the skillet
Add to the skillet
1 small onion chopped
2 tsp minced garlic
1 tsp salt
1/2 tsp ground black pepper
1/2 tsp dried oregano
Break the meat apart and cook until the meat is browned, and the onion is translucent and fragrant
Add
1/2 Cup Sun-Dried Tomatoes, drained and
roughly chopped
1 Cup long grain white rice
2 Cups chicken broth
Bring to a boil, cover the skillet with a fitted lid and reduce to a simmer
Cook another 15 minutes or until the rice is tender
Add
5 oz. baby spinach
1 lemon, zested and juiced
Cook until the spinach is wilted
Serve and enjoy immediately with crumbled feta cheese
