Pre-heat deep 12 inch skillet (with lid) to medium heat, to the pan add
1 tsp. olive oil
1 lb. boneless skinless chicken breasts- cut into one inch pieces
2 Tablespoons taco seasonings
Cook through
Remove chicken to bowl or plate
To the same skillet add
1 Cup Long Grain White Rice
2 Cups chicken broth
(1) 10 oz. can Rotel tomatoes
Bring the skillet to a boil
Add back the chicken and pour in
(1) 15 oz. can black beans-drained and rinsed
Cover the skillet and simmer 20 minutes or until rice is soft
Once the rice is cooked, add in
1 Cup frozen corn kernels
2 Cups shredded Mexican blend cheese
Cover and cook until cheese is melted
