Begin by preheating your oven to 325 degrees F
Line a baking sheet with parchment paper or a silicone mat
In a bowl combine
3 Cups rolled regular oats
1 1/4 Cups raw pecans, chopped as you like them
1/3 Cup raw pepitas
1 tsp. cinnamon
3/4 tsp. pumpkin pie spice
In a small saucepan over medium-low heat, heat
1/4 Cup coconut oil
1/2 Cup maple syrup
3/4 fresh cranberries
1/3 Cup pumpkin puree
Bring to a boil and cook until the cranberries burst open
Spread the dry oat mixture onto the baking sheet
Pour the cooked cranberry mixture over the oats
Mix until everything is fully combined
Bake for 20 minutes stirring to break apart any chunks that form
Rotate the pan to ensure even cooking and remove from oven when lightly browned
