Begin by preheating your oven to 350 degrees F
Add roughly 3 slices of uncooked bacon, chopped small to the skillet and cook
*you will need 1/2 Cup cooked bacon for the recipe*
Once the bacon is cooked, drain and set aside
In a separate pan add
2 Tbsp butter
1/2 Cup yellow onion, diced
1 Tbsp garlic, minced
1 jalapeño pepper, diced
Saute until everything is tender and fragrant
To the mixture add
2 Cups corn kernels
Cook until the corn starts to brown slightly
In a medium bowl stir together
1/4 Cup plain greek yogurt
1/4 tsp. smoked paprika
1/2 Cup cheddar cheese
1/2 Cup pepper Jack cheese
To that same bowl add the cooked bacon and corn mixture
Finally, sprinkle in
1/2 tsp. salt
1/2 tsp. black pepper
Stir until everything is fully combined
Spread the mixture evenly into an 8x8 baking dish
Top with
1/4 Cup cheddar cheese
1/4 Cup pepper jack cheese
