Begin by separating 2 Cups pumpkin seeds from fresh pumpkins Place the washed seeds into a small pot of water along with a dash of sea salt Boil for 10 minutes Drain the seeds and dry them with a paper towel

Transfer the boiled seeds to a bowl and add 1 Tablespoon avocado or peanut oil 1 Tablespoon seasonings of your choice (cajun, mesquite, garlic parmesan etc...) Place them on a prepped baking sheet Bake the seeds for 15 to 20 minutes at 350 degrees or less until lightly browned

These can also be made as a sweet and spicy treat! Instead of salt in the boil use an equal part sugar Use the seasonings mentioned, or choose your favorite pumpkin pie spice, or use 1 tsp each of cumin, cinnamon and ground ginger For a bit of spicy zing with your sweet add 1 tsp. cayenne
