To start, chop up
8 oz. bitter sweet dark chocolate into small pieces
*60% or higher is best and will yield the richest flavor*
In a small sauce pan pour in
1 Cup heavy cream
Bring to medium heat
Whisk constantly until it bubbles and immediately remove from heat
Add the chocolate pieces and put the lid on
Fifteen minutes later come back, remove the lid and whisk the chocolate into the ganache
Use as you like for your favorite recipes
