In a medium bowl whisk together 1 1/2 Cups all purpose flour 1 1/4 tsp salt

To that mixture cut in  1/4 Cup softened unsalted butter You can use a fork or small pastry cutter

Add 1/3 Cup water and 1/2 Cup fed sourdough starter Mix together until a shaggy dough ball forms If you need to add more water do so in small amounts

Place the formed dough on a floured surface and knead until the dough becomes smooth Roll into a long log shape

Cut the dough into 6 sections Cover the dough sections with a towel and allow to rest for at least 30 minutes

Heat a skillet to medium heat  Roll each dough section into round tortillas

Place the tortillas one at a time onto the hot skillet to cook When bubbles begin to form, quickly turn them over and cook the other side Only cook to slightly browned

Enjoy your hot sourdough tortillas immediately
