Set a bowl onto your food scale and zero it out
Pour in 650 grams warm water (zero scale)
300 grams active starter (zero scale)
40 grams avocado oil (zero scale)
50 grams honey (zero scale)
Mix everything together
Next, with the scale zeroed out, add
1000 grams white bread flour (high protein)
Mix the flour into the water/starter with a dough hook, spatula and your wet hands until you have a shaggy ball of dough
Autolyse (rest) 1 hour
To the rested dough sprinkle
20 grams salt
Work in the salt with wet hands
Rest 30 mins
If you are adding raisins to your loaves begin preparing them
To a bowl of water pour in 150 grams by weight dried raisins
This will rehydrate and plump the raisins so that they can be distributed through the loaves
Do 4 rounds of stretch and folds with the salted dough
*Before the 2nd stretch and fold, add half of the raisins to the dough and fold in
The remaining raisins will be added at the 3rd stretch and fold
Refrigerate overnight or up to 36 hours
Remove the dough from the fridge and allow to warm for 2 hours
Divide the dough into two equal dough balls by weight
Bench rest an hour until dough is elastic
De-gass dough with rolling pin and shape for pans
Make a cinnamon sugar filling by mixing together
2 Tablespoons cinnamon
1/2 Cup brown sugar
Sprinkle half of the mixture over the dough, fold outer edges and sprinkle remaining mixture
Fold the front corners of the rectangle to the center seam
Roll the dough up tucking it as you roll to keep the roll tight
Flatten the seam and pinch the ends
Place the formed dough loaf into your oiled bread pans
Let dough do a final rise in bread pans covered loosely with plastic until they reach the top of the loaf pans
Score each loaf with a sharp wet blade
Preheat a baking sheet and broiler pan in your oven at 400 degrees
Loaf pans go on top of a sheet pan
Pour water about 1/2 inch deep in the broiler pan to create steam
Spray hot oven with water as you begin baking the loaves
After 15 mins turn oven down to 375°
Bake an additional 30-35 mins
Turn loaves for even browning
Remove from oven and allow to cool slightly before turning out of loaf pans
