*for best results, use an active starter that has been fed in the last 24 hours, and is warmed to room temperature*

In a large mixing bowl combine 300grams (2 cups) active sourdough starter 2 Tbs granulated sugar 2 eggs warmed to room temperature 4 Tbs coconut or avocado oil 1/2 tsp salt Mix and set aside to rest for 30 minutes

While that rests, combine  1 tsp baking soda  with 1 Tbs warm water (110 degrees F) in a separate small bowl You will gently mix this into the pancake batter just before you are ready to make them, being careful not to overmix

The mixture will experience a gentle rise and will foam slightly. Allow it to rest an additional minute or two Ladle the mixture onto a hot griddle (about 375 degrees F) in 1/4 cup amounts

Cook until bubbles form on the surface of the pancake, and the edges are firm Quickly flip and allow to cook for another 1-2 minutes without squishing or patting down, this will create fluffy cakes
