For the sponge mix together2 Cups 50/50 equal parts blend of whole wheat and all purpose flour2 Tbs granulated sugar2 Cups buttermilk warmed to 90 degrees F
to that mixture add 1 Cup sourdough starter/discard and mix well*your starter does not need to be freshly fed for this recipe*Cover the bowl loosely with plastic wrap and let sit at room temp for 8 hrs
When you are ready to make the waffles heat your waffle iron and mix together2 large eggs1/4 Cup melted butter or avocado oil3/4 tsp salt1 tsp baking sodawhisk together until light
Pour in your sourdough sponge and mix everything togetherLadle the mixture in 1/2 cup quantities onto your heated waffle iron and cook until golden brown
