In order to create that rich, deep flavor development; we recommend prepping the 'sponge' for the waffles at least 8 hours ahead. If you would like waffles in the morning, prep the night before

For the sponge mix together 2 Cups 50/50 equal parts blend of whole wheat and all purpose flour 2 Tbs granulated sugar 2 Cups buttermilk warmed to 90 degrees F

to that mixture add  1 Cup sourdough starter/discard and mix well *your starter does not need to be freshly fed for this recipe* Cover the bowl loosely with plastic wrap and let sit at room temp for 8 hrs

When you are ready to make the waffles heat your waffle iron and mix together 2 large eggs 1/4 Cup melted butter or avocado oil 3/4 tsp salt 1 tsp baking soda whisk together until light

Pour in your sourdough sponge and mix everything together Ladle the mixture in 1/2 cup quantities onto your heated waffle iron and cook until golden brown
