Begin by preheating your oven to 350 degrees F. In a small saucepan heat 1 Stick of butter (1/2 cup) with 1/2 Cup Guinness stout beer Add 1/2 Cup unsweetened cocoa powder and mix until combined

Remove saucepan from heat and allow to cool In a medium bowl mix together 1 Cup flour 1 Cup granulated sugar 3/4 tsp baking soda 1/4 tsp salt

In a separate bowl mix together 1 Large egg 1 tsp vanilla extract 1/3 Cup sour cream Combine on low speed until creamy, then add the cooled chocolate mixture and combine

Next, add in the flour mixture one part at a time Mix between additions and scrape down the sides of the bowl Once the batter is smooth and creamy you are ready to fill the cupcake tin

Pour the cupcake mixture into lined muffin tins Filling each 2/3 full to prevent spillage and burning Bake 18-20 minutes or until a toothpick inserted in the middle comes out clean

Allow the cupcakes to cool slightly, then transfer to a cool rack Now, it is time for the frosting

Beat 2 sticks (1 Cup) softened butter until smooth and creamy Slowly add in 4 Cups powdered sugar and mix until fully combined

Once the butter and sugar are fully mixed, add in 2 Tablespoons milk Followed by 1/4 tsp vanilla extract and  1/4 tsp peppermint extract *add the peppermint in small amounts and taste as you go*

To Decorate Add some green food dye to your frosting Finish with Rolo candies, gold coin chocolates, and Airhead extreme sour gummies for the rainbow. Add dollops of uncolored frosting for the clouds
