In a large, deep skillet heat 2 Tablespoons of cooking oil to medium heat
Brown 1 pound of ground beef along with
2 Tablespoons garlic powder
1 tsp salt
1 tsp pepper
Drain the fat from the meat and put the browned meat back into the skillet
Add in
1 can RoTell tomatoes
(1) 14 oz. can kernel corn
(1) 14 oz. can black beans
(1) 14 oz. can tomato sauce
Stir everything together and add
1 Cup milk
1 Cup chicken stock
Bring the mixture to a low boil
Stir in
1 1/2 Cups Elbow Noodles
Reduce the stove temperature to simmer and cook covered for 15 minutes or until the noodles are soft
Uncover the pot and stir in
1 packet of your favorite taco seasonings
Sprinkle 2 Cups of sharp shredded cheese over the top
Cover and let simmer 5 more minutes or until the cheese melts
Serve straight from the skillet for a simple one pot dinner
