These yummy double stuffed berry meringues are perfect gluten free party food! Fill the meringues with your favorite berries and cream for a delicious light appetizer or family night dessert. Easily made with kids, and they love them.

How do I know? My grandkids and I made these. This is a really great dessert for whatever berries are fresh in season. We sent our grandkids out to hunt in the strawberry patch and WOW they found a lot of ripe strawberries! Time to get creative!

It’s summer! The chickens are laying, the strawberries are ripe and the grandkids are here.  Aliyah, my junior baking partner in chief brought her Cookbook for Girls By Denise Smart. It’s time for kids in the kitchen!

We love this cookbook. It’s full of fun ideas for kids cooking. We made Watermelon Raspberry Punch from this Kid friendly cookbook last August for Camilla’s Birthday and served it with Aliyah’s Simple White Cake as cupcakes. That was a FUN birthday party. And the food was Yummy!

Aliyah picked out Berry Meringues for our baking adventure this time. They turned out great! So I had to share them with you. If you have kids looking for kitchen projects this is a good one. However, these meringues are delicious for all ages and SO easy to make. This recipe is Gluten free, fairly low carb for a dessert and full of fresh healthy egg whites, berries and cream.

I’ll be making these again as a light dessert for Dave and I. They have the lightness of clouds and a delicate sweet flavor. Berries and cream create a delicious (if somewhat messy) bite full. Keep these in mind for a stress free party snack too.

Light as air! Double stuffed berry Meringues have a cream filling and berries. Yum!

Kids love double stuffed berry meringues. This is a fairly healthy concoction with a low fat content and not too many carbs. All in all this is a good recipe to keep handy.

Aliyah and Lainey assembled our meringues into double stacked treats with with scrumptious sweet cream and fresh strawberries. ANY berry can be featured in this treat. All the summer berries will be good if naturally sweet. Just add a bit of sugar to berries that need it. All to your taste preferences.

These treats are messy and need two hands unless you can do a really big mouthful.

Double Stuffed Berry Meringues Dessert Recipe:

NOTE: For safety younger kids can work with a whisk rather than an electric mixer. We used my electric hand mixer. I did the mixing but it can be done with a whisk if you have enough enthusiasm in your junior baking assistants.

NO Cream of Tartar in your cupboard? You don’t need cream of tartar for these meringues.  This recipe is SO easy and uses just a few ingredients easily at hand.

TIPS:

  • Use room temperature egg whites for best results.
  • We used our melon scooper to drop the meringues onto the baking sheet from this set of scoops and absolutely love them! These scoops are beautifully packaged, great quality and make a wonderful gift. So practical too.
  • If you want to easily arrange these meringues on a tray  put them flat side down (or they will wobble around).
  • We lined our baking sheet with silpat mats. But you can use parchment if you don’t have a silpat.
  • USE COLD whipping cream. Warm whipped cream will take a very long time to thicken. Add in the vanilla and sugar to the whipping cream after it has started to thicken.
  • FYI: substituting the sugar for a sugar free substitute MAY work with adjustments. The sugar actually helps to create the light texture we need for the meringues so a substitute may create problems. Let me know if you have a good method for making meringues sugar free! You should be able to replace or eliminate the sugar in the whipped cream if you prefer.
Meringue Dough On A Cookie Sheet

Instructions:

  • Preheat oven to 225 degrees F
  • line 2 baking sheets with parchment paper or silpat mats.
  • Place 2 egg whites into a large clean mixing bowl and beat on high speed with an electric mixer until they form stiff peaks.
  • Sprinkle the superfine sugar a 1/2 tablespoon at a time into the egg whites beating well after each addition.
    When finished the egg whites will be thick and glossy.
  • Drop by teaspoonfuls onto the cookie sheets 2 inches apart.
  • Bake in a preheated oven for 60 minutes. The meringues are done when they peel off the parchment easily. Cool on the cookie sheets.
    For the whipping cream:
  • In a deep bowl with an electric mixer whip the heavy cream until it thickens slightly.
  • Add the sugar and vanilla.
  • Whip until the heavy cream is thick and spoonable.
    For the berries:
  • Slice the berries and put into a one cup bowl.
    To Assemble:
  • Place heaping teaspoonfuls of the whipped vanilla cream onto a meringue.
  • Add the berries.
  • Push them into the cream to hold in place.
  • Top with another meringue and set on serving tray.

  • 1/2 Cup heavy cream
  • 1 tsp. vanilla
  • 1 Tablespoon sugar
  • 12 sliced strawberries, as needed
