- 1 log (8 oz) goat cheese
- ½ cup chopped almonds or pecans
- 2 cups fresh cranberries
- 3 tbsp honey
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
- 1 tsp fresh thyme leaves
- Pinch of salt
- Crackers, crostini, or baguette slices for serving
Instructions
- Preheat your oven to 400°F (200°C).
Make the Cranberry Mixture:
- Line a small circular baking dish or oven-safe skillet with parchment paper or lightly grease it.
- In a medium mixing bowl combine: cranberries, honey, balsamic vinegar, olive oil, thyme, and a pinch of salt.
