This is a reposted recipe. It such a yummy easy way to grill up a healthy quick dinner. I wanted to dust it off, update it and share it again. It’s such a good summer grilling recipe. Enjoy!
It’s grilling time! I have been craving the charbroiled flavor of grilled meat. Tonight I begged Dave to fire up the grill for the first time this summer. Dave grilled this flavorful, marinated chicken to perfection. Moist, delicious and perfectly done. My tummy is feeling heavenly right now. My mouth still remembers all those happy flavors.
I found a REALLY GOOD fruit spread at Costco. Run on down to your local grocery store and see if they have E.D. Smith Peach Mango Fruit Spread. It’s lower in sugar than regular jam and makes an Excellent chicken marinade! Just passing it along. Not a paid endorsement. But this is good and I wanted you to know about it.

Balsamic peach mango grilled chicken. Brush the chicken with marinade while grilling to really cook the flavors into the meat!
To make this marinade TOTALLY from scratch using fresh peaches and mangoes TRY THIS.
- Put the peaches and mangoes into a blender and puree them, sans the pits and skins of course.
- To thicken the puree, heat on the stove, sweeten with your favorite sweetener(I would try pure maple syrup) or sugar substitute if you like, and bring it to boiling.
- Add 1 Tablespoon cornstarch dissolved in a little water. Now boil the sauce a minute or so, until it thickens a bit and looks rather clear than milky.
- Remove from heat and cool to room temperature before finishing the marinade. Now add the other marinade ingredients and whisk until smooth.
I HAVE NEVER DONE THIS! this is an idea for those of you who have the adventurous spirit or can’t find this preserve or a good low sugar substitute and wish to give it a go. I will be putting this on my “to do” list as well. I will update this post if I come up with the perfectly proportioned scratch recipe. For today, I’m going with E.D. Smiths because it makes dinner so easy.
Balsamic Peach Mango Grilled Chicken Recipe Note:
To make this grilled chicken is ridiculously easy. Just whip up the marinade. Reserve some and keep it in the fridge for brushing on during grilling or even a dipping sauce ar serving. Pour the remainder on your chicken breasts and let them sit covered two hours (all day if you want) in your fridge. When the grill is heated up. Cook the chicken 10 minutes a side or until done.
TIP: Brush with extra marinade as desired. Retain some of the marinade for a dipping sauce, or pour a bit over a side dish. It’s so good!
Recipe Instructions:
- Defrost the chicken if frozen
- Put chicken into an 8 x 8 casserole dish (Or Gallon zip lock bag)
- Whisk all the marinade ingredients together and pour over the defrosted or fresh chicken
- Cover and marinate at least 2 hours
- Grill at 375 degrees for 10 minutes.
- Turn the meat and brush with the marinade.
- Grill another 10 minutes; check it for doneness, and serve.
A kale green salad like this one, with creamy balsamic salad dressing and a side of Basmati rice and quinoa in organic chicken broth accompanied this marinated, grilled chicken. Ingredients
- 3 Boneless skinless chicken breasts., We were feeding three adults. If you add more chicken, double the recipe so you have some sauce on the side!
- For the marinade:
- 4 Tablespoons balsamic vinegar
- 2 Tablespoons dijon mustard
- 3 Tablespoons E.D. Smith peach mango, orange preserves ( or something similar)
- 2 Tablespoons soy sauce or gourmet asian sauce
Instructions
- Defrost the chicken if frozen
- Put chicken into an 8 x 8 casserole dish (Or Gallon zip lock bag)
- Whisk all the marinade ingredients together and pour over the defrosted or fresh chicken
