I love cookies of any kind, and peanut butter cookies have always been a family favorite. I came across this recipe for these easy cookies because I was sitting at my house the other night craving peanut butter cookies and I didn’t have any brown sugar.

Almost all of the recipes for peanut butter cookies require brown sugar except for this one. I was a little apprehensive about it at first. Can’t expect much from cookies that only require 3 ingredients…or can you?

Happily, I was pleasantly surprised! These little snacks only require about 5 minutes to whip together and another 10 minutes in the oven. Best thing is; these goodies are really yummy! My husband ate all of the cookies from the little batch that I made in the first night.

I texted mom the recipe and she whipped it up at her house too. The batch she made also disappeared almost instantly. So, needless to say, they have been run through our testing kitchens and approved.

This is a small batch recipe. Perfect for two or three snackers. Double it for a big crowd. They vanish off the cooling racks as soon as they cool.

3 Ingredient Peanut Butter Cookies

These cookies are easy to play with! I encourage you to add a little of your own creative juices to the cookies. For a little extra crunch, use some extra chunky peanut butter. You can also add in vanilla for an extra flavor kick.

They are yummy with just the 3 ingredients. This recipe easily adjusts to your own unique recipe. Another HUGE plus about these cookies? They require NO fridge time. I like that. Make em and Bake Em.

This is a wonderful recipe to start cooking with kids. Can you think of a more perfect last minute after school snack? Spontaneous dessert, slumber party project or superfast movie night treat? Your kids will LOVE helping make these cookies. This recipe is So easy for them to whip up. You may have to help with the oven but they can do the rest.

3 Ingredient Peanut Butter Cookies:

These cookies are gluten free IF you use gluten free peanut butter. I recommend organic, unsweetened peanut butter. Go get some fresh ground from real peanuts for best flavor. Even the ‘natural’ peanut butters I’ve used are higher in fat than fresh ground.

You guessed it. They add oil back into the peanut butter. Sneaky! Organic fresh ground peanut butter has NO sugar or added oil, or chemicals. This recipe has plenty of sugar. The peanut butter does NOT need to add any more!

3 Ingredient Peanut Butter Cookies Easy Peasy Recipe Instructions!

  • Preheat oven to 350 F
  • Mix together the egg, sugar, and peanut butter together in a medium bowl. (add vanilla in if desired)
  • Roll the batter into 1 1/2 inch balls and place on an ungreased cookie sheet.
  • Use a fork to press the dough in a criss cross pattern. (If the dough sticks to the fork, put a little flour or sugar on the fork between cookies.)
  • Place cookie sheet in the oven and bake at 350 for 10-12 minutes. (My oven only took about 8 minutes, so watch them!)
  • Cool cookies on a cooling rack
  • ENJOY!

Ingredients

  • 1 egg, large
  • 1 cup organic granulated sugar
  • 1 cup peanut butter organic and gluten free, creamy or chunky, whichever you prefer!
  • Optional for extra yummy taste:
  • 1/2 tsp vanilla

Instructions

  1. Mix together the egg, sugar, and peanut butter together in a medium bowl. (add vanilla in if desired)

Notes

This is a PERFECT first recipe for kids in the kitchen. They will love this recipe and can do it without much help.

I made these cookies today. They are really easy and taste alot better than a full-blown recipe. The texture is perfect.

I made two batches. The first batch I followed the recipe. The second, Instead of refined sugar, I used half molasses and half blue agave.
